Healthy Apple Raisin Banana Muffins

3 cups whole wheat flour
2 cups all-purpose flour
2 cups oat bran
4 tsp baking powder
4 tsp baking soda
2 tbsp cinnamon
1 1/3 cup raisins
4 eggs, lightly beaten
1 cup brown sugar
1/2 cup vegetable oil
4 cups milk
4 cups chopped peeled apple
2 cups bananas, chopped in small pieces

In large bowl, combine flours, bran, baking powder, baking soda and cinnamon. Stir in raisins. In another bowl, beat egg with sugar and oil; stir in milk, apple and banana. Pour into flour mixture and stir just enough to moisten. Do not overmix!

Spoon into paper-lined muffin tins filling almost to top. Bake at 375 degrees for 20 minutes or until firm to the touch.

Makes 36 muffins.
Freeze extra portions in freezer bags for later!
